Goat meat tastes like... goat. Had lots of it. Don't want any more. Comparing it to lamb is ridiculous. Goat? I'd rather eat west Texas road kill.

Seems like from the comments that hunting is different than jut whacking the poor beast.

yea..my stepdad wants some goat meat. my bro is driving out in the spring, so it should be perfect. he can help.

my main goal, is it has to be quick. dead on it's feet type of thing. of course minimum meat damage. i'm pretty comfortable with the fact that humans are in the animal kingdom. animals that eat meat.

Shoot it in the eye with a .22 if you want it to be as fast as possible.

Up close on a flat trajectory, so it goes right into the brain through the eye socket.

That's what they did when they slaughtered the cattle I raised for food. The whole process couldn't have taken the guy twenty minuets. He shot it, cut the throat, drained into a large bucket, hooked the back feet to some hooks, hit the button and raised it up, started cutting with the big bucket underneath. The other one stood around munching while it was all going on. I liked having them around, they ate the poison oak and everything else on the property so I didn't have to clear weeds. They tasted great. Goats, ugh.

Same here. Between Saudi, Iraq and other wonderful Middle Eastern places, if I never eat another piece of goat in my life, will be a better and happier person.

Give up on killing your own and just go buy one. Now that 1/4th of Mexico lives in the US, whole goats are easy to find in markets, butcher shops...

Goat is like lamb, mutton, or duck, in that if it's done right, it's great. Done poorly, you never want to eat it again...

Better yet, just go buy a pig.

I never thought growing up on the farm that any of my experiences would have any real life applications, but I actually have first hand experience on all of the above.

Goat can be very good or very bad. As far as I can tell, young goat grilled carefully over charcoal is the best way to do it. If done right it is very good. If overcooked or the goat is too old, it tastes like mutton. Anyone who knows anything about sheep knows that mutton doesn't taste anything like lamb. And i don't really care for lamb.

Anyway, there is a right way to kill and butcher goats. You need to prepare in advance. Hands down, the best way to kill the goat is a .22 to the head. Use a revolver, muzzle right to the back of the head. Don't do one goat in front of the other. Immediately slit the throat and pull the goat up by its rear hooves to drain.

The advance preparations require a small outdoor pen with grass covering the ground to absorb the blood and a rope and pulley on a wall or pole that you can use to hoist the body for bleeding.

The correct technique is to tie a rope around the rear hooves while the goat is still alive. If you're gentle it will still stand there, even though it can't move its rear legs. Have the rope attached to a pulley. One person holds the rope and the rear of the goat. The other shoots the goat and has the knife. As soon as the goat is shot, its nerves will make it thrash about some, but you have to slit the throat right away, and the other person pulls the rope, lifting the goat up by the rear legs. Let it drain, then you can field dress it from there. You'll want a butcher's saws to handle the hooves and head. It's pretty intuitive.

done a pig. 90 lbs. .22 to the head, while it was eating apples in a big dog kennel.

deer, elk...all that, but it died in the bushes. goat is uncharted territory, as far as the entire process for me.

thanks everyone. i can find goat in the stores..it is always the rear leg quarter. we arrowed a goat awhile back, took the shoulder, cubed it, and cooked it thai curry style. it was unbelievable. it smelled like a tonton on the outside.

i think the best thing ya could do is lock the goat in a room and CRANK "WHAM" for about an hour and he will just naturally DIE and BLEED OUT!



but 1st i would show the goat the rolling stones album cover "GOATS HEADS SOUP" to get him in the MOOD!

my friend wants to go with me. he introduced me to jimmy the goat guy. he wants to pace off 50 steps, and take turns shooting arrows at it. errr....no. funny but no.

9dreizig, i can bring friends. the latest news, the river is up, so the pigs are not able to get onto his property. let the river go down a bit..i think spring will rock.

Just curious...why is slitting the throat and getting it to bleed out immediately so important? Seems that is a consistent recommendation here, so I was wondering what the purpose of that step is.

funny you should bring this up. i read an article where it stated that slitting the throat is not needed. i think the article said this was the practice for back in the day, when people ate everything. now most people gut the animal shortly after the "lights out", and most of the blood leaves with the bits and parts...

Always heard that the shock of being killed produces chemicals into the blood system. Left alone it moves throughout the body as the heart slowly stops beating (unless its a heart shot) and supposedly is not good for the meat.

From a United Nations Web site reguarding slaughtering of animals:

"Delayed bleeding will result in an increase of blood pressure, and blood vessels will rupture, causing muscle haemorrhage. This extra blood in the tissue will cause the meat to decompose more quickly, resulting in waste of meat."

They also say to keep the animal rested before "stunning"
