you guys like making your own fried chicken?
easy to make, but i think its is a PIA. disposing oil, cleaning up..coating my kitchen with a fine layer of slippy-ness (yes, i use a splatter screen). cost of peanut oils is going up too.
what about you home chefs...homemade fried chicken?

Like you said just too much of a mess, deep fried food and fish are meals I will pay someone else deal with. YMMV

Not so much fried chicken but I like to do onion petals and home fries.
I keep the oil in our deep fryer with a cover on it. I add a little new oil when cooking.

maybe i will pull out my turkey fryer burner, my 12" cast iron pan, and do some pan fried chicken. wonder if it will traumatize my yard chickens?

I love pan fried chicken made in my kitchen.
Everything deep fried, though, needs to be somebody else's problem. Home deep fryers put too much airborne oil and food in the house - and I don't like my home smelling like I live at a fish camp or KFC.

what I do now is preheat the oven to 450, lightly coat the chicken with oil and bake it. not quitethe same as fried but still pretty good

peanut oil is pretty good, but if you are only going to do it once in a while, go whole hog.... by that i mean lard. won't kill you much faster than oil and is so much better tasting.
i use a buttermilk and tabasco soak for a while and then just dredge in seasoned flour. do a double dip and fry away. i like a cast iron pan. best done outdoors on the grill. make some biscuits and eat. |

The closest I get to fried chicken these days is breaded chicken wings. I haven't had more than a couple of pieces of friend chicken since the year that I worked at a Popeyes in Potomac Mills Mall in Woodbridge, VA when I was 16, I'm 39 now. It wasn't that anything at the store grossed me out, I just think I've filled my fried chicken lifetime quota.

I grew up on fried chicken. Mom made it every Sunday, cooked in bacon grease along with loads of onions and homecut fries. Absolutely excellent and as well deadly for you.
It was one of the main causes of her death, clogged arteries... but it sure did taste good!

Here's my recipe:
Leave butter out all day. Coat chicken thighs with butter. Mix flour, salt (a lot) and fresh black pepper (sort of a lot). Coat butter chicken with flour. Get a pan of 1/2 peanut oil just smoking hot, add chicken, leave on high, 7 minutes each side until golden brown, toss in 400 degree oven for 10 minutes. ![]()

I soak mine in coke overnight then make a tempura batter to dip in then fry. MMMM. Don't do it often. Not good for you but now you guys have me craving it. Maybe this weekend.
