Your butcher may need to clean his slicer.

Check the temperature of your refrigerator. It needs to be cold. 38-40F

Maybe cross contamination. Are you cutting up chickens or fish and then making sanwich on same board?

Time. Meat will not last forever if it has been handled improperly.

You need to beat your meat more.

Smack smack smack. Like that.

What kind of lunch meat are you talking about? Deli sliced or pre-packaged? A lot of the pre-packaged stuff is packed in water and you may not notice it when the meat is new. But it's there.

I fry mine in a pan and make a hot sandwich when in doubt

The real issue here swang, is that no one but you actually buys pre-sliced lunch "meat". Have you ever seen the hot-dogs in the 7-11? They've been on the rollers since 1954. Pre-sliced lunch-meat is the same way. The grocer's simply use them to fill empty space on the shelves since they are trying to hide tha fact that we are in the middle of a HUGE food and transportaton crisis. They change the dates weekly to make them seem new.

Why do you think the expiration date is so hard to read?!
