Here's one....
Made Guinness Stew yesterday, and it turned out great. The recipe works for a 6qt crock pot: 3.5 lbs stew meat cubed 5 carrots sliced 2 onions chopped 2 turnips cubed 3 lbs red potatos cubed 4 cups chicken broth 1 1/4 cup Guinness 1 tbl thyme 1 tbl brown sugar 2 bay leaves 1 oz. bittersweet chocolate 4 tbl oil 1/4 cup flour Salt and pepper meat and brown on all sides in 2 tbsp oil in large skillet, put in crock pot. Brown onions in skillet (5 min) and add broth, beer, thyme, sugar, chocolate and bayleaves. Bring to a boil, scrape bits from bottom of pan. Place carrots, potatos and turnips in the crock pot and pour onion/broth mixture in, stir and cook 9-10 hours on low (6-7 hours on high) Last 15 minutes whisk 1/4 cup flour into 1/3 cup Guiness, pour into pot and stir (carefully so you don't bust up the meat. Serve with bread and of course, beer. Happy Saint Paddy's Day!

Craigster59 thanks for the contribution. Unfortunately, someone has already selected an Irish Stew. Your's looks very good. Due to the general lack irish recipes from which to choose, I have elected to chose my own. This is my version of "Irish Stew" which I will call "Shrimp Corn Chowder Style". This is an excellent recipe from one of my favorite local restaurants....nothing Irish about it but it is awesome.
Sundown Cafe Poblano Corn Chowder 1 can of creamed corn, 15 oz 1 can of whole corn, 15 oz ½ lb. shrimp, diced 1 poblanos (pepper) seeded and diced ¼ large onion — diced 3 stalks of celery chopped coarsely 1tsp. lobster base [use glaces gold fruits de mer seafood base - see link below] a pinch or more of ground chile de Arbor [use red chili flake] 1tsp. black pepper salt to taste 1/3 c. sugar roux (1/2 melted margarine and ½ flour) margarine 1 qt. heavy cream 1 qt. ½ and ½ Preparation: Puree onion and celery in food processor. Drain liquid. Melt 2 T in a sauce pan. When hot, add puree and poblanos. When vegetables are softened (but not browned), add shrimp, cream, half and half, black pepper, chile de arbol, sugar and lobster base. Bring to a boil (Be careful. Cream will rise quickly and may overflow). Reduce heat to a simmer and add roux in ¼ increments until desired thickness. Simmer 3-4 minutes. Add both cans of corn. Adjust taste with salt and sugar if necessary. THIS RECIPE IS AWESOME!!!!!!!!!!!!
