There are full caged ones that still look sweet, and fit all your needs.
Pretty easy for a cage builder. Here is a picture of a nice caged one..

Another thing you can do (I'm going to do it on the Speedster kit car) is have the inside of the body sprayed with truck bed liner, that way, it it is hit, fiberglass splinters won't go everywhere..

A buddy built one like this a while back..
