Chicken fried steak aka 'cardiologist dream" comes to mind for Texas specialty. Fajitas or Tex-Mex could be our claim as well.

Santa Maria Tri Tip comes to mind. But I grew up in the Bay Area, hated the smell of steaming crab walking around Fisherman's Wharf as a kid (especially in front of Alioto's and Fisherman's Grotto).
But I love crab now, even had some yesterday. It was at Joe's Crab Shack (the Ventura one is very good with great views). I usually get the BBQ'd snow crab, but I really like Dungeness. We can get Rock and Spider crab at the Saturday A.M. fish market for around $2.75 a lb, and it's good.

When I buy at the fish market, they always ask if I want male or female. Is there much of a difference taste wise?

Crag cakes, crab soups, succotash, and Stuffed Ham (Kale, Cabbage, celery, onion, mustard seeds, celery seeds, salt and pepper), which if done right is terrific.
Deer sausage as well.

Show me in El-Lay where you can get a decent, let alone great Chicken Fried Steak!
And you do not get Tex-Mex... The other thing here is steak. Serious steak.

Pork BBQ
Down east it's whole pig w/ vinegar-black pepper sauce Lexington (western part of the state) it's shoulders w/ vinegar-black pepper sauce and just a touch of ketchup to make the sauce reddish.
