When i was in high school once riding with my friends my handlebars pulled out over a curb and we had no way to tighten it. Pretty far from home we headed twords my other friends house hopeing we would find something to tighten the stem. Not 100 ft from where it happend we found a 9/16 wrench on the road. My brother has a 6th sence for finding snap-ons at flea markets and garage sales. Once we were looking at dishes and he said look for a snap-on cup. Bam I pull out a snap-on cup "heres one" thats happend atleast half a dozen times

Well your sweat equity has turned your $500 USD into over 2K USD...replacement value.

Apparently you have a 42" X 20 smoke chamber with a 2 X 2 firebox all 1/4 inch steel plate..

Your in the game real cheap..now get smokin...

Thanks Tabs, appreciate your advice on this.

So you do have the Ball Valve to drain the bottom...

I fill mine up with water, it is a heat sync and keeps the meat moist.

It is a bit labour intensive..in tending the fire...

I used to load er up with 5 or 6 splits of wood over some lump to get er going..let it all start to turn into glowing coals and put the meat on...It usually only took one load to cook ribs.

Now just the lump and one or two split, bring up to around 300...put the meat on.. With less fuel you have to keep the Dampers/door cracked//// open so that yo get that thin blue transparent smoke. Then you can shut down the dampers a bit...watch the temp and when it just starts to dip put another pre heated split on while opening the dampers..til you get that TBS...repeat// your trying to run right around 250 F.

Briskets are a long pull.the ...heat as above...Flat away from the fire spritz with water wine or whatever every hour or so..when meat temp gets to 150/160 which is Stall Temp.it just hang there forever....wrap in unwaxed pink Butcher paper (amazon for a big roll) put back on the smoker to 195 to 200 meat temp. Place in Cooler with a towel and let rest for 2 to 3 hours... that is basically the Franklin method. Total time with resting 16 to 18 hours..

So far my Flats have turned out to be tender but dry because it is so lean..the Point is luscious... maybe if you injected the Flat with oil or a juice of some kind? I do not do Briskets often because it is so much meat to eat..I would rather a Tri Tip..that is manageable.

When I run a long cook I do a Dutch Oven full of Texas Ranch Style beans...the beans are precooked till soft the seasoning including Beer is then put in and the DO goes on without the lid..to get that smoky goodness...Smoke till nice and thick..I like them better than the meat..

billybek 07-23-2020 03:28 PM

Will have to look for my dutch oven and start a new thread for the first cook.
I was shooting the firebox and lid with my IR thermometer. With the cook chamber at around 300, the firebox sides never got above 480, door about 380 and the lid was about the same temp as the thermometer on the cook chamber. Should be pretty adequate to cook on.

Found this nice Husqy on FB marketplace. The guy's wife was selling it. Apparently, he dropped it - running - on his leg and had to get 18 stitches. She forbade him from ever using it again.

It's the Husqvarna Rancher model, 20" blade. Fired right up! Runs like all Husqvarnas. Paid $50. I already had an 18", so i flipped it for $200 the next day.

You can find a lot of these in Louisiana and Texas for $200-$300. Maybe i Should get a truckload and bring them north to finance a nice Canadian vacation!

Did you at least wash the blood off it before flipping it?

Stopped by an estate sale today. There seems to be one every weekend around here. The house was in a decent area and looked OK from the street so I stopped in. The place was a 70's ranch style and looked like it has never been updated in any way since it was built. The carpet was worn to the backing in the bedroom hallway, the paint looked to be original and it smelled as if it had been closed up for months. It was a zhit hole. I always wonder what the backstory is.

I went right to the garage. Found only 2 things worth my money. An unopened box d12 gav, nails and this nice little 27" aluminum step ladder. $6 bucks for both. SCORE!
