Hammering a nail or any task where your "off" fingers/hand are in danger of injury.
Good shot, I wouldn't have thought of that; one's unconscious on the lookout for danger?

According to the doc, a test (don't know if it's the only test) is the ability to throw a ball equally well with both hands, interesting, I thought, because that physical motion involves the whole body, not just the hands.

He has no preference which hand he throws with and also uses scalpel, etc., with either hand without consciously thinking about it while performing surgery.

Throwing the ball makes sense, and as you stated involves both upper and lower extremity joints, muscles, soft tissue holding elements etc. in a cross crawl action.

The surgery is very impressive.
Maybe some more of the answer is having bilaterally equal control of fine motor skills as well as gross motor skills.
I'm sure there is also some differences in brain makeup or at least the way the 2 hemispheres of the brain communicate in truly ambidextrous people.

Interesting topic.

When an intern assisting in a surgery, he got snapped at by the surgeon, Use one hand or the other!

I learned he was ambidextrous when I showed him how to cut stained glass shapes. I noticed right away that he'd switch hands often. He picked up the skill immediately.

Supposedly only left handed people can hold a writing instrument in each hand and write forward and backward simultaneously.

This is true (for me)

Normal writing with my left hand and reverse (mirror) writing with my right hand.
And the other way round...
