CARP questions....

Caught a CARP down by the river. It's infested with them. How should I prepare it? Haven't talked to my Chef yet.

I've started thinking about an all fish diet to lose some weight.

As an introduced and invasive species, those jumping carp have the potential of permanently disrupting the fresh-water ecosystem of the Great Lakes.

There are no longer any effective predators of them in the Great Lakes and they are voracious feeders. However, there used to be. The alligator garfish, I think it's called. A huge flat-headed fresh-water carnivore that was eradicated from the Great Lakes because it was mistakenly considered a pest and because their scales were useful for jewelry, armor, machining and if ground up, abrasives. They are dinosaur-like and can commonly grow to 400 pounds, six feet long and they do so love carp.

If reintroduced, and once an equilibrium is achieved, gars will force those carp to coexist like the popular bumper sticker emplores the rest of us to do.

Another strategery that is immediately dismissed because it makes too much sense, is to put a bounty on those damn carp until everybody remembers how nutritious and tasty they are when done up right. That's how they got here in the first place. Flooding allowed them to breach their paddocks and escape into the ecosystem via the Mississippi, I think.

I would gut it, scale it cut slits in it, spice it with Tony Cacherie's, couple slices of lemon in the cavity, rub with olive oil and right on the coas for 10 minutes a side (let fish warm up to room temp before cooking).

When I would spend the summers with my Uncle and cousin, my Uncle taught me how to clean the bass and perch we would catch. Then he would cook a delicious fish dinner for us.
I'll never forget the recipe my Uncle told me for carp. I must have been around 12 years old.
Place the carp on a board, Scale it, filet it, throw away the fish and eat the board. The board will taste better than the carp.

Place the whole carp in large pot and add enough water to cover it. Season the water with a little salt and pepper. Bring to the boil for a few hours.

Then throw the carp and water away and eat the pot.

Have any of you had carp? I get these reactions a lot with other animals I eat on a regular basis. Bear, jackrabbit, diving ducks, squirrel, salt water catfish, antelope ... come to my house and try any one of these. A lot is in the preparation and of course the fact that not everything tastes like chicken. I'd eat the hell out of those carp if I'd have them in my river!

We should change the name of carp to something more palatable and exotic, more musical with a lilting of the tongue. Like tilapia.
