In the can, packed with olive oil, drain and flip out on a plate, drizzle with some good olive oil, cracked black pepper... a little balsamic vinegar is I'm feeling fancy.
Or if I'm not feeling fancy out of the can over the sink. ![]() I love kippers but don't consider them sardines... maybe they are extra large smoked sardines?

Kippers, herring, sardines, rollmops, pilchards are all basically the same fish of different ages and preservation techniques.

I enjoy sardines.... in oil with green chilies, or in Louisiana hot sauce, or just plain.
Good on saltines, and good "straight up". Mmmmm..... ![]()

Pickled herrings in sour cream with onions. Smoked on a bagel w/ cream cheese - needs a slice of tomato and onion too.
Mostly though I catch 'em fresh off the pier at Cedar Key using a Sabiki rig, and use 'em for bait. |

Love 'em!
On toasted rye bread, with olive oil or some mayo plus fresh cracked pepper or a little sprinkle of balsamic....just yummy! I also love herring and anchovies too ....same way! They're loaded with Omega3s.....great for the heart AND the eyes too!

I like fresh sardines a lot. I pan-grill them if I get them, and make a persillade or something similar. Eat on toast, optionally.
When it comes to canned fish Spanish or Italian anything will be the best you can get anywhere. Not cheap, but fantastic. Boquerones (white anchovies) are wonderful.

local cubans eat them alive
we had a big elevator boat lift at the boat yard and when the fish were running sometimes there would be a few to a few hundred caught on the lift the cuban workers would grab the still flopping fish and chow down |

No. I just don't put them in my mouth...that's how. I will put them on a hook as a last resort if I run out of plastic worms....hasn't ever happened

I've never had a good sardine in the US and I've tried. Go to Europe for real sardines.

The canned sardines we used to buy when I was a kid still had the guts inside. I loved them & can't seem to find any now days that still have the guts.

I used to get them grilled in the UK with new potatoes and mustard. I love them on crackers too. They're very good for you.
