They already have found e-mails which were deleted elsewhere. For example, the reason the server was discovered were hacked e-mails from a private account. And those had work related e-mails and they were ones that were not turned over.
While it is likely that e-mails sent to/from the server from government accounts are possible to be found, but much more difficult. The problem is some of the State dept people had accounts on her server. Those accounts were not backed up.
Also, it has been found that many people in the Federal Government were using private accounts with assumed names to hide their identities , including Barack Obama and Lisa Jackson. The only resonance to do this would be to avoid Federal Records keeping.
