Trying to cut back on meat consumption....What are your favourite meatless dishes?

Southern Alberta is known as the beef capital of Canada. And I love a good steak or prime rib ...BUT!! .....I do need to cut back some. I'm trying to go meatless for 2-3 meals per week. What are your go-to meatless dishes? Any chance that you can also provide recipes?

Alex,

I was given a great stuffed shell recipe years ago but lost it; it was super simple and used full standard sized packages of ingredients so it was real easy. I'll try and list what I remember, but make sure it makes sense to you before making it!

1 package of large pasta shells- cook as directed. Place in baking dish

1 jar of pasta sauce(Ragu, Prego, etc.)
1 pacakage of frozen vegetable (broccoli, asparagus, etc.)
1 package of ricotta cheese.
1 package of shredded mozzarella cheese.

Mix everything together in a bowl except some of the mozzarella, stuff the shells with the mix, pour the extra over and around the shells, put the rest of the mozzarella on top and bake at 350 until done.

Really good meal.

Cauliflower is really hot right now.

Roast it with some oil, garlic, red pepper flakes, and parmesan.

Roll it in a runny egg wash and bread crumbs,roast it, and toss it in hot wing sauce. Trust me!

i like cooking beans in a dutch oven pot in the oven.

just some chicken or veggie stock. then put some in a bowl, big scoop of fresh pico-de-gallo, some sour cream (or yogurt). my favorite bean right now is great northerns..a white bean.

or pasta. cook pasta. in a pan cook some cherry tomatos until they explode and cook down and sweeten. then put in a dollop of pesto. (i cheat, i get that bigass jar from costco). toss it into the pasta and go. dont over sauce it. the next day, the chilled stuff is a damn good pasta salad. i pour it over spring greens.

You probably won't think this is something you'd eat, but I've been eating it once in a while since I was young. Here goes: one can each of peas, green beans, corn, beets, garbanzos, black beans, & maybe any other thing you might like. I just open the cans and scoop & drain the vegetables onto a plate, put salad dressing on them and eat. I like bleu cheese, Italian, maybe vinegar & oil. It's fast, filling, and good. Some might complain about sodium content, but I don't eat it every day.

I eat meat everyday. I mean 90% of days. Lunch and dinner, mostly. Unless fish is served.

That said, I don't eat large portions.

I love a good Rib eye and have it 1-2 times/month. Rest of the time I only eat chicken to satisfy the meat craving. Further to your six-pack at 55 thread, chicken is a great go-to to appease dietary goals. Tons of recipes on-line. Breast is lean and thighs are the tasty fat stuff.

I switched from steak to pork.

Used to have steak / red meat at least 3 x's a week.

Now maybe 2-3 x's per month.

Ground beef got replaced by ground turkey.

I attribute shaving 60 points of my cholesterol score to my reduction of red meat.

Frozen standard beans/corn/peas mix with a little water.
Add dab of butter, S&P, basil to give it sweetness.
Cook about 10 minutes and done. Easy.

PB, mayo, alfalfa sprout sandwich.
Use a good whole grain bread like LaBrea from LA.

Nongshim ramen (pricey at a buck/per here).
Saute tofu in sesame oil and low sodium soy sos.
Toss in thawed shrimp, an egg or two, maybe a little black bean sos to thicken.
Green onion on top.

Tofu burger smothered it with all your favorite condiments lettuce,tomatoes, alfalfa sprout and so forth on a healthy whole wheat bun.
Along with whatever you like on the side.
And wash it down with your favorite beverage.

Vegan since 12/5/15. I don't enjoy it but I do enjoy the health benefits. Recipe? Don't eat meat. That simple. I had a bean burrito for lunch. Breakfast was toast with peanut butter. I dropped 20 lbs easy.

Ya, this is sort of a follow-up on the "6 pack at 55" thread. We do eat a fair amount of lean chicken and quite a bit of fish too as well as pork. I'm just trying the part-time vegan thing just to see if I can cut down on the whole meat scene.

This week we tried a veggie curry dish with rice as well as a "low-fat" mac and cheese dish from one of my wife's recipe books. I felt really "light" after that and I kinda found the dishes quite tasty....so just looking for more recipes from the PPOT brains here!

What about Salmon? I fry, or broil, it in Girards's Champagne salad dressing...with steamed Broccoli or AssPairofGus on the side...a couple times/week. Damn good.

Portabella mushrooms (big ass ones):
.
Upside down on a cookie pan (deep pan), on Reynolds Wrap pan lining paper...pour a good amount of olive oil on them, salt/pepper,
Slice 'maters atop them, then chopped Basil.
Into oven (350 - 400) for 12 mins., or so...
Pull out 'n top with Mozarella cheese...back into oven until cheese melts all over.
Enjoy. Bloody damn good...you'll think that you're slicing and eating steak.
