ordered some 16x8s. Will wrap them in the 225s, move the 7s to the front with the 205s

8x16 ET23.3

You should be fine w/ just one set, even the 6 & 7 205/55 & 225/50 that you have is fine for a casual 3 -5 track days a year.

You incrementally improve on what you have in stages

stage 1 buy a pair of 8x16 ET10.6, move the stock 7s to the front. Classic Fuchs are heavier than the new evo eversions of Fuchs sold by Fuchsfelge.

all oe 911 Fuchs 7s are ET23.3, doesn't matter if they are 15 or 16, these can be used front or rear w/ appropriate tires.

all 15" 8s are ET10.6, there are 2 version of 8xx16, the 911 version is ET10.6 and the 944 version is ET23.3, for 911 use you do not want the 944 version.

stage 2 by new tires, A052, RE71RS, NT01 whatever, 205/55 & 225/50 or for better acceleration and grip 205/50 & 225/45

if you want more understeer go for 245/45, 8s are o but 9s are better for these.

Only if you want to optimize and are willing to spend some money go beyond that because the suspension will also be calling for upgrades, You would want to do shocks, t-bars and maybe bushes to really nail down the handling. At that point you should have enough experience and knowledge to make decisions on allocation of $ for you self. Going from street to track has a learning curve that brooks no shortcuts.
What are the problems or issues with using the ET23.3 8x16 on the rear of a 88 911?

8ET23.3 places the wheel/tire too far inboard, visually it's odd and you lose a bit of grip due to narrowed track width

back of an SV/Carrera wants 8ET10.6 or 9 ET15 or 9.5ET19

8 ET23.3 could be fitted to a n/b 911 especially so if a short 225/45 tire is used. These would have to be 16s as there are no Fuchs 8x15 ET23.3
