Assuming the car's torsion bars are sitting on jackstands at their highest setting... if the air cleaner and carburators were removed prior to dropping the engine (70 911T) then would there be enough room?

That really depends on the jackstands. I don't think you would need to remove the carbs, unless your jackstands are really short.

You really want the bigger jackstands, I think mine are 6 ton. Not only because they go higher, but the larger base makes them more stable.

12 Ton jack stands

Most 12 ton stands extend to 28" in height.

This will suffice to remove the engine

and if they don't - take a 8' x 12" board and cut it into 8 pieces = glue them together and use them to put your jack stands on...
