2 steps fwd. 1 back....how do I die/tap alternator shaft threads?

An old ugly "friend" bites back tonight holding up my rebuild.

The 16M x 1.00 alternator nut. Stripped again.

1. How exactly can I chase (never used a die before) different threads onto the shaft, and

2. what size should I get?

What happens to the old threads,

3. and what size new nut do I use?

Thanks.
