Help me make a decision

OK, I've got the three cars, the product of a past life when I had more time and $ than sense. Now I've got no time and just enough $. Each car is a work in process and I can only justify 2. One has to go. I'm hoping to get some thoughts on which should stay, which should go. Here's a basic description of each, including plans.

84 Targa, daily driver
The Good: Basically a gutted car that's more fun than I can say. Very light (for a Carrera) with Elephant Racing bearings, 22/29s, Sports, etc. Just sold the 3.2 (pulling it tomorrow) with plans on making it a cab, putting in a 3.3 turbo motor. Lots of new parts like dash, windshield, etc.

The Bad: needs new left fender, new paint, $ for a turbo motor.

Synopsis: would be a kick-a$$ car but for some major time and $. definitely a "keep for life" car in terms of ROI.

69E
The Good: nearly rust-free CA car I picked up several years ago.
54 hours in a 69 E
Have a ton of new parts to make it (in my vision) the ultimate cafe racer:
Weidman RSR anodised deep 6s and deep 7s, 21/26s, elephant racing bearings and sway bars, Koni Sports, S bumper, R taillights, new german velour carpet, new dash, windshield, headliner, yellow-lensed H4's... Basically needs about 80 straight hours of assembly wtih no $ other than paint. Future plans include a 2.8.

The Bad: last paint job was CRAP so it needs total paint.

73 track car
The links say it all. It was going great, but I started a new company and it was the first thing to go into storage. Could be readily ressurrected and a few guys in the area have discussed making it a community track car. Sounds like fun.
