I need to know what part(s) are making my car do this

I've gotten my idle smooth again (though i will still need to get the idle mix and speed correctly set) but my start up worries me.

Here is what is happening:

1. start the car
2. engine sounds and feels rough for about 2 - 5 seconds (almost like its missing) or waaayyyy to rich - no black smoke though)
3. then all of a suddend it revs up to1200 rpm or so and is smooth.
4. from this point on no real problems.

What components come into play right when the key is turned?

I wonder if you have full fuel pressure immediately upon startup? Can you run the fuel pump for 5-10 seconds prior to startup and then start the engine as normal?
OR
There is a test port for fuel pressure on the driver's fuel rail. Can you hook something to this and test the pressure?
