You have to pull the knobs off, and unscrew the retaining nut for each knob. Then push the switch out the back. be very careful with the temp control, as there is a funny looking "wire" that is not a wire, but the temps sensor. Do not bend that tube, as there is a gas inside and the kink will likely rupture that tube, necessitating a new temp control switch.
The different layers are connected and are like a Jenga game and snap together and come apart by pushing them backwards into the console. Once the console is unscrewed from the tunnel, move it just a little out of the way, and where the wires pass through the carpet, and large connector has to come apart. The lock mechanism has a different set of connectors that is trick to get apart. The Bentley manual has a drawing of the way it goes together. The factory parts list also has it and you can get the parts list for free from Porsche US, just download the PDF. It is a real pain in the butt to get it all apart. Even harder to get it all back together. Take lots of pictures as you take it apart, each part and step. I just recently got mine all apart to replace the shifter bushings, and to remove the leather gator over the shift boot for some leather repair, and change the knob. Good luck, it is a tedious and pain in the butt to do. I removed my steering wheel, and the driver's side seat to have access for me, a old fat man. A skinny 14 year old boy with small hands would be helpful, but I have only my large man hands, and lots of cussing and time to do it over a few days.
