use of air/fuel ratio meters on carburated engines
Short of installing sensors in each of the 6 exhaust tubes, how can an air/fuel ratio sensor work if its installed in the single exhaust outlet?

It can, I have one on the left bank. Haven't hooked it up but it should get you in the ballpark. The car won't run very well if the a/f mixture is correct. Just not that accurate with carbs. And it will be rich at idle and lean at wot. It will drive you crazy trying to fix that!! But you can get close.

It works great for tuning everything but idle mixture. Assuming your carbs are in good working order and sync'd.

One sensor in each heat exchanger by the flange, and a dual a/f gauge. I used 2 Innovate LC-1's to a custom Westach dual a/f gauge.
