I can come help but not for about 2 weeks, I'm going to Bonneville. I live in Saratoga and work in Berkeley during the week so my time is limited in the San Jose area.

Plugs, cap and rotor is a good place to start along with valve adjust.
Do you have floor jack, the lifting tool and jack stands/etc. Level place to work?
If you just bought the car you may want to change all the fluids/etc.
Other: fan belt, air filter, fuel filter, new plug wires (Magnacor), dme relay
Other stuff to check/do: brake pads, change brake fluid.

PM me if you want to connect, you might find others that can come over sooner.

In the mean time you might list exactly what you want to learn, just valve adjust and spark plug change? As long as you change the oil(s), keep valves adjusted if it runs OK then the durability is probably covered... right guys? I guess there is a long list of things that should be done and a short list. Long list might include repack front wheel bearings. If the engine and trans are healthy then the big ticket items are covered. That's my 2 cents. Others here know a lot.

I'm a thousand miles away so I can't offer any in person guidance, but you may want to go over what has actually been done on the records you have for the car. According to Porsche, a valve adjustment should be every 15K, along with fuel and air filters, plugs, rotor/cap, oil and filter and a certain amount of inspection (belts, hoses, etc.) Porsche also recommends change out of the brake fluid every two years, in my climate I have followed this to the letter as brake fluid actually will pull water from the air. You are lucky to have such a wealth of willing and experienced people nearby. Cheers
