Deck Height Problem, need advice

Finally got my pistons back from the machine shop and did my deck height check. Find that it varies between .38mm to .50mm. Obviously not good, When having the valve pockets cut into the pistions I also sent a head to the shop along with the pistions. This machine shop noticed a bad machined surface on the heads and recommended they be re-cut (keep in mind 0.035" were already cut from these heads). After cleaning up the original mess the previous PO did on these heads I now end up with this between .38mm to .50mm deck height.

Looking at the host's available cylinder base gaskets I see they have 1.0mm (0.039")available or Should I buy the 1.0mm (0.039") base gaskets and put the on top of the .25mm (0.010") ones I already have to end up with like a (0.054") /1.37mm deck height. Is it OK to stack them like this or should I just go with the 1.0mm gasket and end up with like 0.0445"/ (1.13mm) stack height? Would that be enough?

Car is 95% street and with ocassional DE.
