Reuse intake and exhaust gaskets
If my gaskets only have a few thousand miles on them since I replaced my exhaust. Do I need to replace them regardless. Or can I reuse these.

I wouldn't, you will most likely introduce a leak, and tightening it more beyond spec will just warp the flanges, ask me how I know.

Using old baskets........
Depending on the condition of the gaskets, I re-use the exhaust gaskets. However, for the intake gaskets, avoid using old paper gaskets unless they were recently installed. In case of doubt, simply use new ones. They don't cost that much and the saving is peanuts.
