Okay, got everything off, ready for new parts (just have to order them.)

I didn't really see a reason to pull the crank pulley off, so its staying on and we're working with it. Also, I was going to pull the water pump off to inspect/replace it, what should I be looking for when inspecting the pump?

I would just inspect it installed. Arnnworx has some information.
Water Pump

If you decide to procede, here is a current post with a lot of information:

Have a new WP gasket, maybe a bolt kit, avaition sealant or Permatex hylomar sealant, and a bit of good luck

So what if I didn't even order the parts yet? I'm doing it tomorrow. :)

Now, Im hearing things about updating the water pump to a 42mm pulley, etc. Is this necessary?
