I'd just start buying some scotches. Try some of the Japanese. They are pretty good.

That said, if you are getting fat because you drink several IPAs a day, going to scotch may not be the best approach. You'll drink even more alcohol and pickle your liver.
Quit for a while. Set a goal. For me it was a year, and the closer I get to the 1 year mark, the less I miss it and see the benefits of not drinking. I may never go back.
