CD55 - are you still vegan?
I hit a Vietnamese joint weekly, for lunch when it isn't COVID season. Bay Area has excellent Pho. That said, I prefer bun bo hue which is a different style soup with vermicelli noodles from the Hue area and if you are in a reasonably authentic restaurant (you can tell because there are >50% Vietnamese patrons) you will get it with the right gristly cuts of meat and cubes of pig blood. It is fantastic. If you are still vegan, well, then maybe not something to try.
I have moved to a largely plant based diet, so going back to work I'll have to see what I do about my weekly bun bo hue ... it is probably more cholesterol than I eat all week right now!
