Removing the headliner is as you state, well documented. Watch the videos and I'm sure it will save you from breaking anything other than a few fasteners themselves. Don't be alarmed or discouraged as some of them age-out and will break no matter who does the job. Once you have them in your hand you can search amazon for a bag of clips at low cost. Or, go for the originals at obviously higher prices. Your call.
As for the trim surrounding the gearshift, and assuming a manual, the front part of the leather surround, near the cubby hole, is easily pried upward with a plastic trim tool. There are two clips, one on each side, and once loosened, the whole boot slides forward (towards the front of the car) by a simply pull motion. It is not necessary to remove the shifter but that is also not difficult in the event that you want/need more clearance.
