I'm 6', and this is what I usually default to in a 911:
-Seat heights all the way to the bottom (if electric). If anything, a slight bump up in the front height.
-Seat set as far forward as necessary for proper clutch pedal comfort (and engaged clutch leg angle).
-Seat back adjusted somewhat upright for proper back support, gear lever position, and distance to wheel.
-Aftermarket Sparco steering wheel with extended hub.
If steering wheel position is your main issue, it can be usually be dealt with using different hubs or spacers (or lack thereof).
FWIW, I think the 1985+ sport-seat 911 is one of the most comfortable and supportive (factory) driving position set-ups there is. You should sit in a new BMW if you want real discomfort!
