I am in the process of doing this to an alpine white car. I used a heat gun to take off the top portion and the 3m adhesive remover to get off the rest. I've been using a plastic putty knife (Which melts if heated too long
and haven't had an paint issues. I would be careful how long you let the adhesive remover sit on the textured part of the paint and scrap away from it as you can peel it up as well.
