My 1983 does the same thing, if I am running down the road it will stay in the middle, if I am setting still or in stop and go traffic it will go to the white, the fans will kick in and the temp will go back down to about middle and the cycle starts all over again. I have asked about this on the forum and seems like this is the normal.
