Although not "trendy" as far as Tex-Mex, the fajitas and bacon-wrapped shrimp at the Blue Goose are 2 dishes that can't be beat!....Hey, there's you a full day of fun: Eat lunch at the Blue Goose (North of the LBJ on Midway), then drive just a bit further north on Midway until you're running next to the runway of the Addison airport. Turn left on Commander, go down about a block, and you'll be at the RUF autocentre. When you finish there, drive over to the airport and go through the Cavanaugh Flight Museum (one of the best aviation museums anywhere)
