210 f is not anywhere near hot enough to cause your motor to have any problems, running or otherwise. I was in Tucson last month in my 911 and saw 230 on the gauge while on the highway with no problems.
The high temps may be causing the fuel to vaporize in a line somewhere or your fuel pump may be getting tired, but the oil temp alone will not cause this. My car runs at one needle width under the mid point on the gauge. You want it to be around the middle part of the gauge and out of the "cool" region before going over 3500 rpm's.
If you are running dino oil I would stay under 240 or so, and syn oil under 250/260 or so just to keep the motor happier. I only see anywhere near this when running in the summer with the A/C going and stuck in traffic.
