I replaced the dash face in my car with brushed stainless faced plastic laminate (formica). It worked great, and fits nicely into the trim surround. You could use this and just don't make the cutouts.
I had to buy a whole sheet and have tons left over. If interested, I'll give you a large enough piece to do your dash that you could play around with. Here is a poor pic of mine.
