When I had overheating problems it turned out to be the oil cooler seals having gone bad. The oil had clogged up the thermostat, and would not allow the hot water to flow from the block to the radiator. The radiator subsequently never got hot, and the fan thermoswitch never turned the fan on.
When the temperature gauge is hot, feel the hoses to and from the radiator. If they both get hot then you have flow. If they do not then you don't. If you have no flow your thermostat could be stuck closed as opposed to being clogged with oil. That would be my next check.
