I could not go vegetarian, I'd crave meat too much. That said, we are on a 100% wild game diet at home which greatly reduces animal fat and when going out I often go with the fish or vegetarian dishes. Combined with high fiber breakfast and 6+ servings of fruit and vegetables a day it has made a big difference.
I have quite a few vegetarian friends and some of them (especially the women) struggle to get all their nutrients and rely on supplements. The Indians have it down pretty well, but you better like your lentils and beans.
In summary, unless you are vegetarian for ethical reasons, I would recommend moderate lean meat consumption once or twice a week. I would make sure to get a piece of read meat once a week.
