I discovered just yesterday that Rum is not the only alcohol you can try in these cakes. I am now thinking I need to take the advice given and go with a flavored brandy. To my surprise there are Gin based cakes, Whisky based cakes, and all sorts of brandy cakes. A new one on me is Armagnac a brandy from Gascony FR.
Here's another one that caught my eye, Morello Cherries, Cherry brandy, and chocolate (Arcadian Forest).
