According to my 74-89 911/912/930 Authenticity Series book by Mark Haab, the removable hard top was available for all years of the cabriolet top. The top came with a heated rear window and was a $9K option. It also states that a different top was used from 1986 and later cars that did not fit the earlier cars. It also states it was not a popular option because the cab top had to be removed to install it.
I don't know about post 89 cars, but if you pick up an authenticity book for those years, it probably talks about the top.
Bruce Anderson's Performance Handbook also mentions the removable hard top as an option from the Special Wishes program for speedsters. Bruce includes a picture of the speedster with the top installed.

I've only seen one car for sale that had the removable hard top.
