If carefully done, and no more slippery than stock, should work. With the rubber pads off brake and clutch, you can just drill a couple of holes in the steel pads of the levers, and rivet to them, or tap them for machine screws, or just run a bolt through with a nut on the back to hold your pieces on. You can drill through the gas pedal easily enough as well.

The one thing you don't want to do is have something which has any chance of getting loose in operation. Most disconcerting.

You can ease the "seat too far forward" issue a bit by making a nice upholstered L shaped pad, which will sit her up a bit and forward, with the seat itself not so close to the shift lever. But that won't necessarily get the wheel in a comfortable position. Me, I favor sitting close, NASCAR style. Better leverage on un power assisted steering.
