Once a year is good practise. I am sure you'll be fine to go up to 2 years, but running any more than that is nuts.
Also, if you drive 1k mile a year, you will need 150 years to reach an engine rebuild.
Of course some people like to look at the cars more than drive it. Can't argue with that.
