I've done a couple of these conversions and IMO the easiest solution to the throttle is a universal cable which runs from the bellcrank on the trans. up through the fan housing and finally to the carb.
This basically converts from Porsche (rods and levers) to VW (cable.) See example in link below.
Starting at the bellcrank, replace the linkage ball for the "coathanger" rod with a new one that fits the threaded end of the kit. Run the cable to the carb remembering that the sheath must be fixed or stopped at both ends. The cable can now run through the carb throttle and fastened with the stock barrel nut. Leave a little extra cable incase you need to adjust the slack.
Also, how are you addressing the rear motor mount on the car?
