As others have said, that's an optional factory fabric. It was used more commonly on the 928. And as is often the case with Porsche materials and colors, was despised and now is valued.

An upholstery shop can probably make wider versions of the vinyl side panels and stitch it back together.

As for the 'reasealed' engine, that description is used to cover a variety of things. Most often it's disassembly of the "top end" and replacing oil return tube seals, chain housing seals, etc. At its most extreme, it could mean splitting the case and resealing case halves (unlikely, because that becomes a 'while you're in there...' activity)
