Based on the Hagerty valuation tool, a condition 1 '72E is $145k for a condition 1 and $104k for a condition 2 car. If your car is as described, I'd put it somewhere in there condition-wise after putting all the stock stuff back on it (closer to a 1 - but I haven't seen the car).
The valuation tool is a rough idea... There are a lot of factors that come into play with our old cars. The biggest factors in the case of your car - aside from actual condition - are the rarity of the color and transmission. If somebody has to have a pink '72 sporto, I think you could name your price. But the car will have to be perfect.

I disagree with your assesment regarding which category this car falls in. According to Haggerty
"#2 cars could win a local or regional show. They can be former #1 cars that have been driven or have aged. Seasoned observers will have to look closely for flaws, but will be able to find some not seen by the general public. The paint, chrome, glass and interior will all appear as excellent. No excessive smoke will be seen on startup, no unusual noises will emanate from the engine compartment. The vehicle will drive as a new car of its era would. The one word description for #2 cars is "excellent."
I would say that this car is between a number three and number two. Wouldn't take much to bring it up a bit in value by RTS. I think rare color plays a big part. I know most people are wary of the sportos because of rarity and difficulty finding local repair. I think this has been addressed already. Cool car and good luck.
