Processed means nitrates and nitrites. The n&n have been on the "avoid" list for years now, this study is just a confirmation.
You can buy a lot of processed products that are nitrite and nitrate free, including bacon, ham etc. We shop at Trader Joe's a lot and they have quite a good selection of meats that are n&n free. I am sure same is true at other stores such as Whole Foods.
Red meat is all meat that is not poultry, including pork. We eat 90% wild game. I am sure it is mostly considered red. I am not worried about it. Rarely do we eat large portions, such as some people down steaks and burgers daily.
In summary, red meat in reasonable portions and avoiding nitrates / nitrites and you are all set.
