Take existing engine, put in a 2.4/2.7 crank during the rebuild. You’re pretty much there.

Paint I would do last. Build the car. Make sure you like it. Paint it your color if you decide to keep it. You can always pull the rebuilt engine back out and sell it.

Your 68 912 gearbox is better geared than a 70-71 911 gearbox. But you can use either and just need to figure out clutch once you decide.
