Mmm...we have posole every Christmas in abq. My sons mother in law makes a big batch for the extended family and friends. We also have fresh made enchilladas with both green and red Hatch chilis. I love Christmas in abq !

Not a big fan of hominy but Rancho Gordo makes some really outstanding beans. You should try their Tarbais beans in a cassoulet.
