Haupia pie, custard or pumpkin custard from Lees. I haven't had a lemon meringue in years. My local bakeries don't make those very often.

Pecan pie and Deluxe fruit cake from Collin Street Bakery in Corsicana Texas are simply the best.

I'm staying away from almonds. Eating them cracked a couple molars that i got removed on Tuesday. It does sound interesting, though. Is it like pecan pie?

Yes, it looks just like a pecan pie with just paste. The paste is bought pre-ground so there would be no danger of cracking a tooth. The crust is like a normal pumpkin pie.

I worked with an older man that was born and lived in a small town in the Netherlands until his 30's. He worked in a bakery over there.

Every Christmas, he would make and bring in an Almond pie for us guys. A small pie would be enough for about 10 ...super filling.

I remember asking him what was in it. He said almond paste and butter...lots of butter!

Almond cakes are pretty common in Europe. They are quite good, I make them often.
