If my off the boat from Italy great grandmother had written down any of her recipes, I could run a fantastic family style Italian restaurant.

I also have a Mumbai family curry recipe that you could open a restaurant around, it's better than any Indian food I've ever had here in the states and 3 times traveling to India.

A proper Neapolitan pizza and Florentine sandwich shop would be a favorite of mine too.

I'm sure that we've all been to restaurants with great food that closed down. And often they are replaced by restaurants with food that isn't nearly as good and sometimes those last much longer.

I've been to some of those restaurants with great food that shut down and thought "they need to charge more for food!"

This ^^^. A buddy up here bought a place at least 2x failed I'm aware of 3 years ago and it has been a struggle. He sunk a ton of money into it and fixed it up pretty nice. He's had to take loans, mowed through his soon to be X-wife's savings and is "living his dream" 6 days a week 12-16 hour days.

It is in a decent location away from town some, other establishments, and right off Hwy 108 in Soulsbyville. His wife who he is now separated from was all on board and worked very hard to get it off the ground. Him banging one of the young waitresses and talking bleep about the wife and feeling up said waitress that was captured on live security video she was monitoring at that moment from home has not helped at all.

His wife cuts my hair, when I cut it anyway and she said it has not made any money and he is too stubborn to throw in the towel.

Of course. I've been to many good restaurants with poor location. Ones that charge next to nothing for amazing food and have been in business for ages. Had $80 to $115 steaks that plain out sucked. Worked in high end French and BBQ and Jewish Deli. To me, location and parking is everything. Then comes having something you can't get anywhere else like the Peruvian charcoal chicken that is $11 for a leg and thigh with rice and plantain and 2 sauces that I'd pay double and still feel I got good value.

So from my own list, there is incredibly good Italian in Boston, so wouldn't do that. But the Indian I would and that would be successful especially by adding upscaled street food options.

There is no 48 hour dough pizza in Boston. I don't think there's even 24 hour dough. With the right location, a Neapolitan pizza and Florentine sandwich (using imported Italian flour) place is virtually a guarantee here.

Owning a restaurant is frankly a *****. If you don't love it and don't have the scale to step away from the grind periodically, it will wear you out. My daughter has lived the life for 20+ years. She used to enjoy it, but any joy has evaporated. Work from home has hollowed out our downtown. It is now a ghost town devoid of office workers that used to come for lunches, happy hours and early dinner after work. Folks with no money and worse have filled the void. The more successful places are now in neighborhoods away from the downtown core.

Customers have also gotten more picky over the years and frankly tiresome. She often gets folks wanting to see her vegan menu. In an italian place where everything is flour, eggs, meat and butter. She does have a gluten free option on pizza dough and pasta. But still, if you are extra picky, stay home or find a place that caters to your needs and don't ***** and moan to the owner of a place that could care less about your "issues".

I've romanticized the idea a few times. I'd really like to see a good solid diner pop up nearby with a good solid matzo ball soup on the menu. Then I look at the people who actually work in restaurants these days and then the romance fades away.

I don't understand folks that want extremes at places that are likely the opposite of the extremes.

It is possible to get good gluten free pasta, pizza crust, and bread these days, but of course, if the person is super picky or has an actual medical issue, there's going to be "cross contamination" since the kitchen is probably full of gluten.

But the whole vegan thing is crazy. "I'm sorry, we don't have any vegan options." should be the standard response.
