I am fixing up the kitchen for the new renter (ugh!) besides painting the cabinets (double ugh!) the thirty something year old sink is very tired. So out it comes, it is a flush mount with a stainless steel ring and little tabs screwed in around the perimeter underneath holding the sink in. If I unscrew those tabs will the sink fall on my head?

No. The sink is resting on the countertop. Unscrew the tabs, turn them 90 degrees, and pull the sink out from above.

No, there should be a rim above or below the tile/countertop. But if it does fall on your head, diregard this reply.

Funny, my dad is helping me and he installed the bugger but can't remember... he is pushing the big eight zero so I can't get mad at him.
