Harddrives Purple Sweet Potato Tart




Sweet Purple Potato Tart
This recipe is for one tart using a standard 9 inch pie crust. Keep in mind that you will want the 9 inch pie crust about 2/3 full of the potato/onion mixture. Potatoes do not need to be perfectly sliced as they will be baked into a tort, but make sure they are consistant and not more than 1/4 thick. This is a vegetarian recipe, but you could easily add sausages or minced meat to the dish.

Ingredients.
1 1/2 cups Purple potatoes, peeled and sliced 1/8 thick. Use redskins if they are unavailable
1 1/2 cups Sweet potatoes, peeled and sliced 1/8 thick.
2 eggs
1 cup finely chopped onion
1 garlic clove finely minced.
1 cup milk
3 oz crumbled goat cheese
1/8 cup shredded asiago cheese
4 tablespoons olive oil
1 tablespoon sea salt
4 heaping table spoons of brown sugar. Sucre nat may be substituted if desired.
1/2 TEAspoon nutmeg
1/2 TEAspoon white pepper
1 whole wheat frozen pie crust.

Have table salt/black pepper available when cooking.
A large flat bottomed pan with a lid will be used.

Directions

1) Add olive oil to large flat bottomed pan, and heat to medium. Once hot, add onions and garlic. Onions should start to brown and get translucent.

2) Add 2 cups of water to the pan along with the brown sugar and stir until consistant. Be careful as the oil in the pan will spit quite a bit when you add the water.

3) Add the potatoes and bring water to a simmer, sprinkle on some table salt and black pepper, then reduce heat and add cover. Cook covered for 10-15 minutes, or until potatos start to soften, don't over cook! Remove the lid, increase the heat, and allow the water to reduce to a thick syrup. If you turn the pan sideways, there should be no water flowing around.

4) Use a spatula to lay the potato/onion mixture into the frozen pie crust, around 2/3s full. Make a nice even layer and mix the different types of potatoes. Put this aside.

Preheat the oven to 350 degrees

5) In a large mixing bowl, combine the eggs, milk, nutmeg, white pepper and sea salt. Beat very well.

6) Spread an even layer of crumbled goat cheese on top of the potatoes. Sprinkle on the asiago cheese.

7) Pour the egg mixture on top, and bake for 45 minutes. A sprig of rosemary can be placed on top for decoration if desired.
