i did a tiny amount of research on what causes meat to be tough. it pretty much amounts to the age of the animal. there are other factors, like where the cut came from, etc., but age is the biggie.
i happen to know that the meat i have came from a trophy elk. thus, i am guessing that the animal had a bit of age and size to him.

I have to agree with you on that one. But elk is better tasting than deer in my book. Elk are grazers they eat grass, deer forage and eat whatever they find. I grew up in Bend the deer eat pine needles and sage brush so they make about a 100lbs of jerky....

Friend of mine only eats meat he kills. He takes his deer with a knife.

i had some deer in nebraska. oh, man, it was good. better than beef. of course it was big and fat as it had been eating corn right out of the field and was shot at fifty yards from a blind.
the deer around here, mulies, is pretty hit and miss. i've had some that was okay and some that was inedible. like you said, they eat pine needles and sagebrush and mesquite and who knows what else. richard, a knife? really?

I can't imagine getting close enough to take a deer with a knife, let alone stabbing the thing.

i can imagine getting that close, as i've gotten that close. the problem is that they have these pointy antlers and they are strong and mean. count me out. i'll shoot 'em with a rifle.

He hunts year round and says guns make too much noise and people notice someone sneaking around with a bow.

Claims it is legal if he is not using a gun or bow.
He did ask permission to hunt on my brother's land before taking anything. Brother said it was okay as long as he didn't use a gun, he just grinned real big and said great. Also likes rabbit, squirrel, and frogs.

My granddad kept us in deer and elk. I remember us having stew and chili from it, but don't remember it being any different than any other stew or chili mom fixed.

Get off my lawn!

I hunt for my meat at the grocery store or the restaurants.
My brother is a big time deer hunter. He uses a bow & arrow. His record was 18 in one year. All legal. The limit is one buck, one doe per day in possession.

Talked about using a flashlight and gigging the frogs with a pointed stick. Didn't ask how he got the rabbit and squirrel. He probably used a sling shot.
