Cliff. I make my chicken adobo with just a mixture of vinegar, soy sauce, water, chopped onion, & garlic. I boil it down at the end to reduce it to a thick sauce that sticks to the chicken.

Exactly what I do! Cool.

I did add one smashed piece of ginger because I could. This tine.

After seeing an Argentinian grill fired with wood, to say nothing of Robert & Louise in Paris (thank you Anthony Bourdain for ruining that place), I've been wanting to cook steaks over wood for over a year now. Necessity being the mother of invention, I thought I had more charcoal than I did for a NY Strip marinating all day in BBQ sauce, so I used a few chunks of cherry after the coals got going. Without commenting on the flavor, the spectacle alone makes it an absolute necessity in the future. And it was delicious with an excellent char. The fat was sublime.

Heatwave? Sure, I’ll fry something. Holy heat stroke!

Thank goodness for my outdoor cook station. And a cold beer.

Looks fantastic!! We travel to visit family in Ft Pierce a couple times a year and often spend the night in St. Augustine. Where was your lunch spot? Will need to try it. Do you ever go to O'Steen's for fried shrimp? Good stuff!

Caught a decent Rainbow (1.75 lbs) while staying with the In-Laws in Wyoming this weekend. Baked whole with rosemary, lemon, butter, etc.
Plated with whipped garlic mash (crema infused) and topped with marinated spring onion.
Red cabbage tossed in a mango vinaigrette for the outer edge.

Lamb chops with a lemon thyme shallot butter sauce and asparagus. Delightful and a nice change of pace. Love simple flavors sometimes.
